            Our smokers are categorized into three distinct types: commercial, residential, and competition. Whether you aspire to open a thriving BBQ business, desire restaurant-quality meals in the comfort of your own home, or dream of dazzling the crowds at a local competition, identifying your specific needs will guide you towards the ideal smoker. Let's kick off by exploring our exceptional range of commercial models.

           Our commercial smokers are divided into two categories: sliding shelf and rotisserie. Both types utilize gas, either natural gas or propane, as their heat source and burn wood to infuse that delicious smoky flavor. The sliding shelf pits, such as our CTO and CTO-DW models, are often referred to as the most bang for your buck models. These smokers feature racks that span the entire cooking chamber, allowing you to cook a large quantity of food without taking up too much space. Additionally, they are equipped with an internal convection fan that ensures even heat and smoke distribution, resulting in a perfectly cooked meal every time. While our sliding shelf models are highly regarded, many of our customers prefer the rotisserie style.

            We offer two distinct styles of rotisserie models: end loading and front loading. The end loading style, which includes models like our EL-EC, EL-EDX, and SSJ, is particularly favored by our customers. True to its name, these models are loaded from the opposite side of the firebox, allowing for a more even distribution of heat and smoke from the firebox into the cooking chamber. This, combined with the rotisserie function, ensures a consistently even cook throughout the entire cooking process. However, we understand that space may be a concern for some, which is why we also offer front loading rotisserie models like our SSE and SSM. These models have the cooking chamber doors and firebox door on the same side, cooking in a manner similar to an offset smoker. The heat and smoke on these models move from one side to the other, resulting in hotspots closer to the firebox. To address this, we have equipped these models with internal fans to help mitigate the hotspots. With these two styles available, we aim to provide you with a model that fits best in any environment.

Ole Hickory offers a remarkable line of residential smokers that are inspired by our commercial models. These smokers are designed to deliver the same level of high-quality barbecue that you love from your go-to restaurant. Among our residential line, we have the CTO-UQ, also known as the Ultraque, which is our smallest model. Perfect for intimate gatherings with your immediate family, the Ultraque still offers a decent cooking capacity. Moving up in size, we have the CTO-TQ, the smallest model equipped with an internal convection fan. This fan ensures even heat and smoke distribution throughout the cooking chamber, while the wider racks allow you to showcase a variety of proteins. And for those with big dreams of starting their own business, we offer the CTO, a versatile model that serves as both a residential and commercial smoker.           And let's not forget about our competition smokers, the ACE models. These exceptional smokers, including the ACE-JW, ACE-BP, and ACE-MM, are specifically designed for those who want to take their barbecue skills to the next level. These solid fuel models rely on charcoal, lump or briquettes as the heat source, creating a consistent and controlled cooking environment. By using wood for the smoke flavor, these smokers ensure that every bite is infused with that authentic, smoky taste that barbecue enthusiasts crave. While both charcoal and wood can be used, it is recommended to use charcoal as the heat source and wood for the smoke flavor for the best results. With the ACE models, you get the same high-quality layout as our popular CTO models, with the only difference being the fuel type.
